Why Did We Make Our Own Chilli Oil?
Before making our own, we tried everything available.
Imported versions in glass jars with premium packaging. Local versions in plastic bottles that smelled more of oil than chilli. Supermarket own-brands that had heat but little depth. Restaurant-supply versions that were consistent in the way industrial products tend to be consistent, reliably ordinary.
The problem was not simply that these products were bad. Each had something going for it.
